Kimchi Jjigae is also known as Kimchi Stew or Soup. It is one of the most common and popular stews in Korean cuisine. The main ingredient is kimchi which is a traditional food used for many different dishes. Kimchi Jjigae can have different fillings, this recipe uses Pork. Kimchi Jjigae is often served with rice on the side and it is most impressive when it is served boiling hot and bubbling in a Ddukbaegi.

Ingredient Preparation
Pork Cut the pork into small bite size pieces and slightly season with a pinch of salt and pepper Kimchi If the kimchi is not cut, slice the kimchi into fairly large bite size pieces (about 5 cm in width) Vegetables and Tofu Wash and cut the vegetables and tofu to appropriate sizes (as illustrated)
Cooking Kimchi JJigae Pork
1.Put in the seasoned pork belly at the bottomof the Ddukbaegi and stir until the pork is cooked. (Add one tbsp of oil if you’re using pork shoulder) 2. Add the kimchi and cook on medium high heat. Make sure to stir the kimchi with the pork so that it does not stick to the bottom.
3. Do this for about 8-10 minutes, until the kimchi is soft. 4. Put in 1 cup(for 1serving) or 2 cups(for 2servings) of Water or Anchovy stock and leave to boil. 5. When the water starts boiling put in the sliced Onion, additional Gochugaru, Soy sauce, Gochujang and Minced garlic. 6. Leave on medium high heat for about 10 minutes.
7. Check whether the meat has been cooked. If it has, place the sliced Tofu on the surface of jjigae.
8. Leave to boil.
9. Try your jjigae. How old the kimchi you use is will determine the sourness and taste of your jjigae. If you want less sourness put in a little sugar and/or water. If you want more spiciness put in sliced Chilli peppers.
10. When you are happy with the taste, sprinkle the Spring onions on top.
11.We highly recommend you serve the Kimchi Jjigae with some white rice on the side.
